Melted Snowman Brownies

Ingredients

  • 175gm (6.2oz) chopped unsalted butter
  • 175 gm (6.2 oz) chopped dark chocolate ( I use anything over 63%)
  • 1¼ cups of caster sugar
  • 3 eggs
  • 1 cup almond flour or meal
  • ½ cup dark dutch cocoa
  • Melted Snow Decorations
  • 50gm (1.8oz) white marshmallows
  • 1Tablespoon cream
  • Orange icing or lollies for decorating
  • soft liquorice
  • extra marshmallows (6-8)

Instructions

  1. Set the oven to 170C (340F). Cup cake papers or a smallish muffin tin ( lined or greased)
  2. Choose a tin that is not too deep to bake the snowmen in.
  3. Put the butter and chocolate into a bowl and melt in a micro wave or double boiler till soft. stir to melt
  4. Beat sugar and eggs till light and fluffy and white. Add the cooled chocolate mixture into the eggs with the almond and cocoa and mix well to combine. Spoon the mixture into the papers or muffin tins. bake 15-20 minutes or till just firm to touch.
  5. Cool
  6. To make the Marshmallow snow man
  7. Put the marshmallows into a jug or bowl with the cream. Blitz for 30 seconds in a micro wave and then stir to combine. Cool slightly. Spoon about ½ teaspoon onto each brownie. Cool
  8. Meanwhile make tiny balls for the eyes, some little carrot shaped orange noses and hats by shaping soft liquorice. Rest each piece of liquorice hat on a half a marshmallow. Let these dry out before storing in an airtight container till needed. They will last for about 4-5 days . Keep in the fridge till you need them. then bring to room temperature
