Ingredients

Cake

  • 1 c vegetable oil
  • 2 c sugar
  • 3 eggs
  • 3 c flour
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 1 c chopped pecans
  • 3 c peeled and chopped apples

Frosting

  • 1/2 c butter
  • 1 c brown sugar, packed
  • 1/4 c evaporated milk
  • 1/2 tsp vanilla

Instructions

For the cake

  1. Preheat oven to 350 degrees. Grease a 9 x 13 pan. Combine oil, sugar, and eggs. Stir in flour and baking soda. Add vanilla, pecans, and apples. Spread in prepared pan and bake for 45-50 minutes. Cool for 2 hours. Then prepare frosting.

For the frosting

  1. Boil all ingredients in a small saucepan for 2 minutes. Set pan in bowl filled with ice water. Beat icing until of spreading consistency. Spread over top of cake.

    • No, there is no cinnamon in this recipe, even though it really does look like there is. I am sure that cinnamon would be good though.

  1. This was amazing! Thank you!! The caramel glaze was delicious! I left out the pecans and added cinnamon to be more kid friendly and it was a big hit!

  2. Would this be possible to make gluten free? I have a daughter that loves apples but gluten intolerate. I would be curious to know if anyone has tried.

    • Yes, it would be VERY easy to make this recipe gluten free. Bob’s Red Mill makes a great gf flour. You can just substitute that in place of the regular AP flour. There are other mixes you could use as well.Bob’s was just the first one that came to mind that is readily available in most markets.

    • I’m pretty sure than any type of nut would work, and pecans would go very well with the flavor of the apples. Just use the same amount (1 cup).

  3. This cake has become a family favorite. I’ve made it four times, using pecans or walnuts. Both are great. Got the fifth one cooling on the counter as we speak. I thank you, my family thanks you! great recipe!
