Recipe: Veggie and Black Bean Tacos
- kale (finely chopped)
- a handful of sliced mushrooms
- baby spinach
- tomato (chopped)
- 1/2 sweet onion (sliced)
- can of black beans (rinsed and drained)
- tortillas of choice
- red pepper flakes
- chili powder
- cayenne pepper
- Sauté (with grape seed oil or veggie broth) the kale, mushrooms, spinach, onion, and beans in skillet on medium heat. Add seasonings. Warm tortillas on oven rack.
- Cook the veggies for a few minutes, then spoon the mixture on tortillas. Garnish with beautiful slices of avocado!
