Recipe: Veggie and Black Bean Tacos


  • kale (finely chopped)
  • a handful of sliced mushrooms
  • baby spinach
  • tomato (chopped)
  • 1/2 sweet onion (sliced)
  • can of black beans (rinsed and drained)
  • avocado
  • tortillas of choice
  • red pepper flakes
  • chili powder
  • cayenne pepper
  • salt


  1. Sauté (with grape seed oil or veggie broth) the kale, mushrooms, spinach, onion, and beans in skillet on medium heat. Add seasonings. Warm tortillas on oven rack.
  2. Cook the veggies for a few minutes, then spoon the mixture on tortillas. Garnish with beautiful slices of avocado!
