Skinny Mac and Cheese


  • 3 cups uncooked pasta of choice
  • 1 small/medium head of cauliflower
  • 2 whole garlic cloves
  • 1 cup chicken stock
  • 2 cups grated extra sharp cheddar cheese
  • ½ cup grated parmesan cheese
  • salt and pepper to taste


  1. Bring a large pot of water to a boil. Pour in your favorite pasta and cook until al dente according to package directions.
