Homemade Candy Coal For Those Naughty Kids


  • 70 grams egg white icing
  • Black food coloring
  • 700 grams sugar
  • 230 grams water
  • 1 egg white (35 g)
  • 5 drops of lemon juice
  • 200 grams icing sugar
  • 1 teaspoon Flavored Extract – I used Almond
  • Black food coloring


  1. In a large bowl combine all ingredients until smooth and thick.
  2. A good test is when a knife blade drawn through the icing leave a clean cut.
  3. Add more sugar if necessary.
  4. Add the food coloring.
  5. Prepare a rectangular pan lined with greased parchment paper.
  6. Combine water and sugar in a deep saucepan until 1/3 of the height.
  7. Bring to boil until 126ºC.
  8. Remove from heat and add the egg white icing.
  9. Stir in circles until foam forms.
  10. Keep stirring until foam surfaces again.
  11. Pour the mixture into the lined pan.
  12. Break the coal in pieces.
