Vegan Blueberry Maple Quinoa Cereal

Ingredients

  • 1 cup quinoa, rinsed
  • 1 1/2 cups water
  • 1 cup non-dairy milk (I used YÜ Basmati Vanilla Rice Milk)
  • Generous drizzle of maple syrup
  • 1 cup fresh blueberries



Instructions

  1. Cook quinoa in one and a half cups of water in a pot, bringing to a boil over high heat. Reduce heat to medium-low, cover and simmer 15-20 minutes or until water is absorbed.
  2. Remove from heat and add non-dairy milk. Spoon quinoa into bowl. Then drizzle maple syrup on top and sprinkle with blueberries.
