Roasted Sweet Potatoes with Sage
- 2 large sweet potatoes, peeled and sliced thin
- 1/3 cup sage, minced
- 2 garlic cloves, minced
- 2 Tbsp. olive oil
- salt and pepper to taste
- Preheat oven to 400
- In a large bowl, toss thinly sliced sweet potatoes in olive oil, sage and garlic. Sprinkle with salt and pepper.
- Transfer sweet potatoes to a large roasting pan.
- Bake in preheated oven on middle rack for 30-35 minutes until sweet potatoes are tender.
- Serve warm.
