Roasted Sweet Potatoes with Sage


  • 2 large sweet potatoes, peeled and sliced thin
  • 1/3 cup sage, minced
  • 2 garlic cloves, minced
  • 2 Tbsp. olive oil
  • salt and pepper to taste


  1. Preheat oven to 400
  2. In a large bowl, toss thinly sliced sweet potatoes in olive oil, sage and garlic. Sprinkle with salt and pepper.
  3. Transfer sweet potatoes to a large roasting pan.
  4. Bake in preheated oven on middle rack for 30-35 minutes until sweet potatoes are tender.
  5. Serve warm.
