This homemade summer sausage is delicious, and the recipe makes enough to serve at a small gathering. We love it on a platter with fresh veggies and cheese.
Ingredients
- 2 pounds ground beef
- 2 Tbsp Morton’s Tender Quick Salt
- 1 tsp liquid smoke
- 1-2 tsp garlic powder
- 1 tsp black pepper
- 1/2 cup cold water
Instructions
- Mix all the ingredients well and place the mixture in the refrigerator for 12 hours. Remove from the refrigerator and remix. Divide the cold mixture in half and shape into logs.
- Wrap each log tightly with foil. Place the logs in the refrigerator to cure for up to 4 days. Poke several holes in the foil to allow excess fat to drain away.
- Place the sausage in a broiler pan and bake at 325 degrees for 1 1/2 hours. You can eat this immediately, or freeze it for up to 3 months.
