Minted Carrot and Green Bean Salad


  • 2 tablespoon mint, chopped
  • 1/2 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • pepper
  • 1 carrot (or half a can of carrots)
  • 1 handful green beans, chopped into 1“ pieces (or half a can)


  1. Whisk together the first five ingredients for the dressing.
  2. If using a fresh carrots and/or green beans, boil them for about 4 minutes, then drain.
  3. Pour dressing over carrots and green beans.
