Minted Carrot and Green Bean Salad
- 2 tablespoon mint, chopped
- 1/2 teaspoon minced garlic
- 1 tablespoon olive oil
- 2 tablespoon red wine vinegar
- 1 carrot (or half a can of carrots)
- 1 handful green beans, chopped into 1“ pieces (or half a can)
- Whisk together the first five ingredients for the dressing.
- If using a fresh carrots and/or green beans, boil them for about 4 minutes, then drain.
- Pour dressing over carrots and green beans.
