Ingredients
- 1 head of cauliflower
- 1 medium onion
- 4 strips bacon
- 1 liter of vegetable stock
- 1/2 half liter of milk
- 1 cup of cream
- 1 tbsp parsley
- 1 tbsp nutmeg
- salt and pepper
- 2 eggs
- butter
Instructions
- Chop up the onion and the bacon finely
- Heat up some oil in a pot
- Add the bacon and onion to the pot
- Fry until golden
- Cut up the cauliflower and add to the pot
- Add the stock and boil until the cauliflower is done
- Add the milk and cream
- Season with nutmeg, parsley and salt and pepper
- Separate the whites from the yolks of the two eggs and add the yolks to the pot
- Blend everything with a hand blender
- Heat it up again
- Sprinkle some more parsley on top
