2 cups coarsely chopped smoked chicken
1 roasted red pepper or pimiento, chopped
1/4 cup finely chopped onion
1/2 cup mayonnaise (reduced-fat or nonfat is fine)
1/2 tsp BBQ dry rub (adjust amount to taste)
Combine all ingredients thoroughly, then cover and chill for at least an hour to allow flavors to develop.
