- 2 cups coarsely chopped smoked chicken
- 1 roasted red pepper or pimiento, chopped
- 1/4 cup finely chopped onion
- 1/2 cup mayonnaise (reduced-fat or nonfat is fine)
- 1/2 tsp BBQ dry rub (adjust amount to taste)
- Combine all ingredients thoroughly, then cover and chill for at least an hour to allow flavors to develop.
