Strawberry Pie


  • 9 inch pie shell, baked
  • 3 cups strawberries, hulled, washed and drained
  • 1 cup water
  • ¾ cup sugar
  • 2 tablespoons cornstarch
  • 1½ tablespoons butter (or about the size of a walnut)


  1. Fill pie shell with 2 cups of choice berries.
  2. Crush remaining 1 cup of berries.
  3. Soak them with the water for 5 minutes, strain and reserve 1 cup juice.
  4. Combine sugar with the cornstarch; stir into berry juice and cook for 3 minutes or until thick and clear.
  5. Add butter.
  6. Cool slightly and pour over fruit to glaze berries in pie shell.
  7. Chill.
  8. Garnish with whipped cream and strawberries, if desired.
