Ingredients
- 1 cup chickpeas (dried or canned)
- 1 cup tahini sauce (sesame seed puree, available in specialty food stores or the international section of large groceries)
- 1 tablespoon lemon juice
- ½ teaspoon cumin
- 3 crushed garlic cloves
- ½ teaspoon chili powder
- pinch of salt to taste
- olive oil
- parsley leaves
- slices of lemon
Instructions
- If using dried chickpeas, soak overnight. Drain, add fresh water, and simmer until tender, about one hour. Drain. Put aside a spoonful of whole chickpeas for garnishing and mash the rest. Add tahini sauce, chili powder, garlic, cumin, salt, and lemon juice to chickpeas and using a blender or food processor, blend to a smooth paste. Sprinkle top with olive oil and garnish with whole chickpeas, finely chopped parsley, extra chili powder and slices of lemon.
