Ingredients

  • For salad:
  • 2 heads romaine lettuce, washed and torn into bite-sized pieces
  • 1 red bell pepper, diced
  • 2 celery ribs, diced
  • 2 carrots, peeled and diced
  • 10 grape tomatoes, halved
  • 1/2 small red onion, diced
  • 1/2 English cucumber, diced
  • 2 tablespoons shredded Parmesan cheese
  • For dressing:
  • 1/2 cup Sabra Chipotle Hummus, including all of topping
  • 1/4 cup reduced fat milk
  • 1 tablespoon rice wine vinegar

Preparation

  1. Place all ingredients for the salad in large bowl and toss gently to combine.
  2. Whisk all ingredients for dressing in small bowl.
  3. Pour half of dressing on top of salad and toss well to coat. Add more dressing as desired or serve extra on side.
