- 1 Eggplant
- 2 Cloves garlic, minced
- Extra-virgin olive oil
- Sea salt
- Fresh ground black pepper
- Slice eggplant about an inch thick.
- Combine garlic, olive oil, salt, and pepper.
- Brush on a small bit of little olive oil mixture.
- I usually grill at 400 degrees about 8 minutes/side.
