Recipe: Mandarin Pine Nut Roll


  • 1 recipe roulade
  • ½ recipe vanilla pastry cream
  • 1 ¼ cups heavy cream, slightly sweetened with powdered sugar
  • 1 large jar mandarin segments in light syrup
  • 2 cups pine nuts, toasted in the oven until golden brown
